What material and thickness should I cut these from?

These are designed to be cut from 4130 chromoly and TIG welded together. Some guys have MIG welded them in the past, but TIG is what's recommended for the assembly.

Are these flat plates or do some pieces need to be bent?

Some of the plates in this assembly need to be press bent, not just flat cut. You'll want to run the DXFs on a plasma, laser, or waterjet and have the bent pieces formed on a press.
